Note: The ingredient quantities listed are approximate. I’ve been cooking by ‘eyeballing’ for years, and this recipe has naturally evolved without precise measurements. I have done my best to estimate the correct amounts and ratios of ingredients for smaller portions, but feel free to adjust as needed. Everyone’s taste preferences vary, so you may want more or less of some ingredients. Feel free to play and make it your own! Enjoy.
Ingredients
2 tbsp olive oil
4 cloves garlic, minced
2 can (15 oz) whole white beans, drained and rinsed
2 cups kale, chopped
½ tsp thyme
½ tsp rosemary
½ tsp oregano
½ tsp basil
Salt and pepper, to taste
Preparation
Step 1 - Prepare the Ingredients
Mince the garlic, drain the white beans and chop the kale
Step 2 - Sautee the Garlic and add Spices
Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. Then add the stir in thyme, rosemary, oregano, and basil. Cook for about a minute, stirring frequently to avoid burning.
Step 3 - Add the beans and kale
Add the white beans and cook until warm. Stir in the chopped kale and cook for another 2–3 minutes, until wilted but still vibrant.
